The only fried rice you’ll ever want to eat.

Ingredients
2 tablespoons - Cannabutter
2 tablespoons - Olive oil
1 tablespoon - You Name It Garlic Butter
1 head - Garlic, minced
2 cups - Steamed rice
½ dozen - Eggs
1 bunch - Green onions
1 teaspoon - Garlic powder
1 teaspoon - Onion powder
1 teaspoon - Black pepper
1 ½ tablespoon - Sesame oil
1 teaspoon - Cayenne pepper
½ teaspoon - Paprika powder
1 teaspoon - Mushroom seasoning
1 tablespoon - Fish sauce
1 tablespoon - Soy sauce
½ - Sweet onion, diced
½ cup - Rotisserie chicken, shredded
⅓ cup - Chinese sausage, diced
⅓ cup - Dried shrimp
1 tablespoon - Fried shallots, for topping
To taste - Chili oil
Instructions

Soak the dried shrimp in a small bowl in water and set aside

Mince the garlic

Dice the sweet onion
-
Chop green onion
-
Chop the chinese sausage into bite size pieces
-
Drain the water from the shrimp and squeeze dry
-
Turn on heat to med-high

Add the garlic butter and minced garlic and diced onions
-
Add in the dried shrimp and let it cook for 1 minute
-
Add in chinese sausage and shredded chicken and allow it to cook for a 1-2 minutes

Turn the heat down to medium
-
Add olive oil into the center of your skillet and crack 4 eggs into the center
-
Quickly stir as the eggs cook, reduce heat if necessary
-
Add your steamed rice into the pan before the eggs are fully cooked and mix everything together

Now add your dry seasonings and give it a nice mix
-
Add in the cannabutter and the last 2 eggs
-
Turn the heat up to high
-
Add in your sesame oil, fish sauce and soy sauce and stir
-
Let it cook for a minute while continuously stirring
-
Add in the green onions and give it a quick stir
-
Top it with fried shallots and chili oil to taste
Tips
-
Heat your garlic head in the microwave for 20-30 seconds to easily peel
-
Soaking the dried shrimp helps soften and rehydrate it
-
Squeezing the water out of the shrimp will help keep water out of your fried rice
-
Since the shrimp, chinese sausage and chicken are already ready to eat, you do not need to cook it for too long so you don’t burn it
-
Cooking the eggs separately in 2 parts allows for more egg pieces in the rice
-
The cannabutter is added near the end so you don’t burn it
-
I don’t use salt because the other ingredients already has a high sodium content
