The only fried rice you’ll ever want to eat.

Ingredients

2 tablespoons - Cannabutter

2 tablespoons - Olive oil

1 tablespoon - You Name It Garlic Butter

1 head - Garlic, minced

2 cups - Steamed rice

½ dozen - Eggs

1 bunch - Green onions

1 teaspoon - Garlic powder

1 teaspoon - Onion powder

1 teaspoon - Black pepper

1 ½ tablespoon - Sesame oil

1 teaspoon - Cayenne pepper

½ teaspoon - Paprika powder

1 teaspoon - Mushroom seasoning

1 tablespoon - Fish sauce

1 tablespoon - Soy sauce

½ - Sweet onion, diced

½ cup - Rotisserie chicken, shredded

⅓ cup - Chinese sausage, diced

⅓ cup - Dried shrimp

1 tablespoon - Fried shallots, for topping

To taste - Chili oil

Instructions

  1. Soak the dried shrimp in a small bowl in water and set aside

  2. Mince the garlic 

  3. Dice the sweet onion

  4. Chop green onion 

  5. Chop the chinese sausage into bite size pieces

  6. Drain the water from the shrimp and squeeze dry

  7. Turn on heat to med-high

  8. Add the garlic butter and minced garlic and diced onions

  9. Add in the dried shrimp and let it cook for 1 minute

  10. Add in chinese sausage and shredded chicken and allow it to cook for a 1-2 minutes

  11. Turn the heat down to medium

  12. Add olive oil into the center of your skillet and crack 4 eggs into the center

  13. Quickly stir as the eggs cook, reduce heat if necessary 

  14. Add your steamed rice into the pan before the eggs are fully cooked and mix everything together

  15. Now add your dry seasonings and give it a nice mix

  16. Add in the cannabutter and the last 2 eggs

  17. Turn the heat up to high

  18. Add in your sesame oil, fish sauce and soy sauce and stir

  19. Let it cook for a minute while continuously stirring

  20. Add in the green onions and give it a quick stir 

  21. Top it with fried shallots and chili oil to taste 

Tips

  • Heat your garlic head in the microwave for 20-30 seconds to easily peel

  • Soaking the dried shrimp helps soften and rehydrate it

  • Squeezing the water out of the shrimp will help keep water out of your fried rice

  • Since the shrimp, chinese sausage and chicken are already ready to eat, you do not need to cook it for too long so you don’t burn it

  • Cooking the eggs separately in 2 parts allows for more egg pieces in the rice

  • The cannabutter is added near the end so you don’t burn it

  • I don’t use salt because the other ingredients already has a high sodium content
